Crispy Za'atar Chicken & Halloumi Protein Wraps with Minted Cucumber Yogurt

Ingredients
- 1 lb chicken breast, cut into thin strips
- 2 tbsp za'atar seasoning
- 2 tbsp olive oil, divided
- 8 oz halloumi cheese, sliced into planks
- 1 cup plain Greek yogurt
- 1/2 cucumber, finely diced
- 1/4 cup fresh mint, chopped
- 1 clove garlic, minced
- Juice of 1 lemon
- 4 whole grain tortillas or lavash wraps

Instructions
- 1. Season chicken strips with za'atar, salt, and pepper. Toss to coat evenly.
- 2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until crispy and cooked through. Remove and set aside.
- 3. In the same skillet, add remaining oil and halloumi slices. Cook for 2-3 minutes per side until golden brown. Remove from heat.
- 4. In a small bowl, combine Greek yogurt, diced cucumber, mint, garlic, lemon juice, and a pinch of salt. Mix well.
- 5. Warm tortillas according to package directions or briefly heat in a dry skillet.
- 6. Spread a generous layer of minted cucumber yogurt sauce down the center of each tortilla.
- 7. Top with shredded lettuce, red onion slices, crispy za'atar chicken, and halloumi.
- 8. Fold the bottom edge up, then roll tightly from one side to create a secure wrap.
