Ingredients
- 1.5 cups low-fat cottage cheese
- 1 cup rolled oats (gluten-free if needed)
- 4 large eggs
- 2 medium apples, thinly sliced
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 cup plain Greek yogurt
- 3 tbsp almond butter
- 1 tsp vanilla extract
- 1 tbsp maple syrup (optional)
- Coconut oil spray
Instructions
- Preheat oven to 375°F (190°C). Lightly spray an 8x8 baking dish with coconut oil.
- Blend cottage cheese, oats, eggs, yogurt, and vanilla in a food processor until smooth.
