Ingredients
- 2 cups diced sweet potato (1/2-inch cubes)
- 1 tbsp avocado oil
- 8 oz diced smoked ham steak
- 1 tsp smoked paprika
- 4 large eggs
- 1/2 cup shredded smoked gouda
- 2 tbsp tahini
- 1 tbsp pure maple syrup
- 1/2 tsp cayenne pepper
- Fresh chives (garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Heat avocado oil in cast-iron skillet over medium-high. Add sweet potatoes; cook 8 minutes until edges caramelize.
- Add ham and smoked paprika; toss to coat. Cook 3 minutes until ham crisps slightly.
- Create 4 wells in mixture. Crack eggs into wells. Sprinkle smoked gouda over entire skillet.
- Transfer skillet to oven. Bake 8-10 minutes until egg whites set.
- While baking, whisk tahini, maple syrup, cayenne, and 1 tbsp water until drizzle-consistency.
- Remove skillet from oven. Drizzle spicy maple-tahini sauce overtop.
- Garnish with chives. Serve immediately.
Chef's Note
For extra crisp sweet potatoes: par-cook in microwave 2 minutes before skillet-frying.
