Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat avocado oil in cast-iron skillet over medium-high. Add sweet potatoes; cook 8 minutes until edges caramelize.

  4. Create 4 wells in mixture. Crack eggs into wells. Sprinkle smoked gouda over entire skillet.
