Ingredients
- 1 lb lean ground lamb
- 2 tbsp za'atar seasoning
- 1 tsp smoked paprika
- 8 large butter lettuce leaves
- 1 cup grated English cucumber
- 1 cup full-fat Greek yogurt
- 2 tbsp fresh lemon juice
- 1/4 cup chopped fresh mint
- 1/2 cup quick-pickled red onions (thinly sliced onion + 2 tbsp red wine vinegar)
Instructions
- Make tzatziki: Combine yogurt, grated cucumber (squeezed dry), lemon juice, mint, and 1/4 tsp salt. Chill.
- Heat skillet over medium-high. Brown lamb, breaking into crumbles (5 mins).
- Add za'atar, paprika, 1/2 tsp salt. Cook 3 more minutes.
- Meanwhile, quick-pickle onions: Combine sliced onions with vinegar in bowl, set aside.
- Pat lettuce leaves dry and arrange on serving platter.
- Spoon warm lamb mixture into lettuce cups.
- Top with pickled onions and drizzle with tzatziki.
- Garnish with extra mint and lemon wedges if desired.
