Instructions

  1. 1. Heat 1 tbsp olive oil in a large skillet over medium‑high heat. Add ground turkey, break apart, season with cumin, smoked paprika, chili powder, garlic powder, salt, and pepper. Cook until browned, 5–6 min.\n2. Remove turkey, set aside. In same skillet add remaining 1 tbsp oil, then add cauliflower rice and diced red pepper. Sauté 4–5 min until tender.\n3. Stir in cooked black beans, cherry tomatoes, and cooked turkey. Toss well.\n4. Add lime juice, 1 tsp of fresh lime juice, and 1 tsp olive oil. Cook 2 min more, letting flavors meld.\n5. Sprinkle chopped cilantro, season with salt & pepper to taste. Stir to combine.\n6. Transfer to bowls and top with optional avocado slices or grilled corn.\n7. Serve immediately with lime wedges on the side for extra zest.\n8. If desired, a few extra chili flakes can give a spicy finish.
Chef's Note
For added crunch, toss in a handful of roasted chickpeas at the end. If you love heat, sprinkle a dash of cayenne pepper over the finished bowl.
