Ingredients
- 4 tilapia fillets (6oz each)
- 1 cup fresh blueberries
- 3 tbsp honey
- 1 tbsp turmeric powder
- 2 cloves garlic, minced
- 1/2 cup shelled pistachios, crushed
- 1 tbsp olive oil
- 1 lb broccolini
- 1 lemon, sliced (for serving)
- Salt & pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Line sheet pan with parchment.
- Blend blueberries, honey, turmeric, and garlic into smooth glaze.
- Toss broccolini with oil; arrange on one side of pan.
- Pat tilapia dry; brush both sides with blueberry glaze.
- Press crushed pistachios onto tops of fillets.
- Place fish next to broccolini on sheet pan.
- Roast 15-18 minutes until fish flakes easily.
- Drizzle remaining glaze over broccolini.
